MEDIA RELEASE: Chef Exchange to celebrate flavours in Singapore and WA

Chefs from Western Australia and Singapore are set to embark on a flavour-packed adventure with a new Chef Exchange Program to inspire the use of more WA ingredients in the Singapore market.

The exciting collaboration is part of the Plating Up WA: Singapore Edition supported by the Western Australian Government through the Invest and Trade WA Singapore Office, Department of Primary Industries and Regional Development and Buy West Eat Best program.

DPIRD Executive Director Liam O’Connell said Plating Up WA expanded into Singapore for the first time last year showcasing the diversity and richness of both regions' cuisines while promoting exports from WA and fostering culinary innovation.  

“It is fantastic to see Western Australia and Singapore partner again on Plating Up WA: Singapore Edition, which gives international consumers an opportunity to experience WA produce.

“The Chef Exchange Program is an exciting step to put a spotlight our unique ingredients, products and the story behind them.”

Some of the key local ingredients to be featured are Pardoo Wagyu, Harvest Road Leeuwin Coast Akoya, Austral Fisheries Glacier 51 Toothfish, Geraldton Fishermen’s Co-operative Western Rock Lobster and Bravo® apples, marketed as Soluna™ apples in overseas markets.

Representing Singapore will be Executive Chef Lamley Chua of 1-Arden which includes the renowned Kaarla and Oumi establishments. Chef Lamley will travel to Perth from 12 to 16 of June.

Representing Perth will be Executive Chef Lucas Fernandes of the iconic Fraser’s Restaurant Kings Park.  Chef Lucas will visit Singapore from 16 to 20 July.

The chefs will experience a tailored program in each location where they will learn about local cuisine, suppliers, and culture. They will also collaborate to deliver the exclusive Four-Hands Dinners in both Perth and Singapore to demonstrate their knowledge while showcasing WA produce.

Chef Lamley said it was an honour to be the inaugural Chef Ambassador for Plating Up WA: Singapore Edition.

“At Kaarla and Oumi - and across the 1-Group of restaurants - we have been using WA ingredients for many years,” Chef Lamley said. “I look forward to working with new ingredients and presenting my creations at the Four-Hands Dinners in Perth and Singapore during the Singapore festival.”

As the WA representative, Chef Lucas said he was excited to take part in the Chef Exchange Program with Singapore.

“It’s a wonderful opportunity to visit Singapore for the first time, work with Chef Lamley and showcase some of the best of WA ingredients,” he said.

More about Plating Up WA:

Plating Up WA was launched by Buy West Eat Best in 2018 to support food service and WA produce during the slower winter trading period. In 2022, Singapore was chosen as its first overseas campaign, with diners stepping out to enjoy the many WA-inspired dishes and drinks at participating restaurants throughout the month-long festival.

Plating Up WA: Singapore Edition is back for the second year with selected restaurants, cafés, and bars set to serve specially created dishes and drinks using Western Australian produce during the dining festival from 23 June to 23 July.
