Balthazar restaurant is situated at the base of an original Art Deco apartment block, the ‘Lawson’ apartments.

With thoughtful and clever dishes focusing on local produce, Balthazar aim to give you an experience that they are confident you will be very pleased with.

Much like their food, the carefully selected wines are aimed to take diners on a journey. Focussing on terroir driven and minimal intervention wines, no doubt you will find something incredibly unique for you with their always-changing wine list.

Balthazar are open for Lunch and Dinner Monday-Friday and for Dinner on Saturday.

For our dish: we use fantastic local sweet chestnuts from Chestnut Brae in Nannup, just 3 hours south of Perth. We combine a chestnut purée with Grand Marnier, cream and vanilla and pipe this mixture around a round base of hazelnut crunch (milk chocolate, hazelnut paste and hazelnut praline combined with crispy crepe pieces) and then on top of that we place a liquid dark chocolate and rum ganache which has a candied chestnut set in the centre. Once the Mont Blanc is piped onto the plate we sprinkle over pieces of aerated Valrhona dulcey chocolate (caramelised white chocolate) and then finish with a snow of white chocolate.
